Indulgent rum and spice bread made easy in a bread machine for a comforting treat.
Ingredients:
  • 1 egg
  • 1 tablespoon rum extract
  • 3 tablespoons butter, softened
  • 3 cups Gold Medal™ Better for Bread™ flour
  • 3 tablespoons packed brown sugar
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon bread machine or quick active dry yeast
  • 1 egg yolk, beaten
  • 1 1/2 teaspoons finely chopped pecans
  • 1 1/2 teaspoons packed brown sugar
Instructions:
  • Crack 1 egg into a 1-cup measuring cup, then add water until it reaches 1 cup. Carefully measure out the egg mixture along with the rest of the bread ingredients in the order specified by the bread machine manufacturer.
  • Choose between the Sweet or Basic/White cycle, and select a Medium or Light crust color. Avoid using the delay cycle.
  • Combine all topping ingredients in a small bowl. Around 40 to 50 minutes before the bread is done, open the bread machine, gently spread the topping on the loaf, and close the lid to finish baking. Once baked, take the bread out of the pan and let it cool on a rack.
