Bread Machine Hot Cross Buns

Sweet cinnamon yeast bread rolls with dark and golden raisins made effortlessly in your bread machine.
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 4 cups Gold Medal™ Better for Bread™ flour
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons salt
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons bread machine or quick active dry yeast
  • 1/2 cup dark raisins
  • 1/2 cup golden raisins
  • 2 tablespoons cold water
  • 1 tablespoon milk or water
  • 1/2 teaspoon vanilla, if desired
Instructions:
  • Crack 2 eggs into a 2-cup measuring cup, then pour in water until you reach 1 1/3 cups. Proceed by adding the egg mixture and all remaining bun ingredients, except for raisins, another egg, and cold water, into the bread machine pan following the manufacturer's instructions. Toss in the raisins when the machine signals or 5 to 10 minutes before the final kneading cycle finishes.
  • Choose the Dough/Manual cycle, avoiding the delay cycle. The total time may vary depending on your appliance and setting.
  • Gently remove the dough from the pan with lightly floured hands. Cover and let it rest on a floured surface for 10 minutes.
  • Prepare your baking surface by greasing a cookie sheet or two 9-inch round cake pans. Divide the dough in half, then divide each half into 8 equal pieces. Roll each piece into a smooth ball and place them about 2 inches apart on the cookie sheet or 1 inch apart in the pans. Use scissors to snip a cross shape on top of each ball. Cover and allow the dough to rise in a warm place for about 40 minutes, or until it has doubled in size (when an indentation remains after touching it).
  • Preheat oven to 375°F. Gently mix egg and cold water, then brush over the tops of the buns. Bake for 18 to 20 minutes until beautifully golden brown. Transfer from the baking sheet to a cooling rack and allow to cool slightly before serving.
  • Combine all icing ingredients in a medium bowl and mix until smooth. Add additional milk, 1 teaspoon at a time, until desired consistency is reached. Drizzle a cross on top of each bun with the icing. Enjoy warm.
