Quick and easy bay scallops coated in bread crumbs, pan-fried in a fragrant blend of olive oil, butter, and lemon juice for a delightful seafood dish.
Ingredients:
  • 1 cup Italian-season bread crumbs, or more to taste
  • salt and ground black pepper to taste
  • 1 egg
  • 0.5 cup bay scallops, or more to taste
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1.5 teaspoons lemon juice
Instructions:
  • Combine bread crumbs, salt, and pepper in a convenient resealable bag.
  • Lightly whisk the egg in a bowl. Dip scallops in the egg, then transfer to the bag with the bread crumb mixture. Seal the bag and shake until scallops are evenly coated with bread crumbs.
  • In a skillet over medium-high heat, gently simmer butter, olive oil, and lemon juice. Add breaded scallops and cook, shaking the skillet occasionally, until beautifully browned, in about 6 to 7 minutes.
