Sous vide eggs, breaded and fried until crispy and golden.
Ingredients:
  • 7 eggs, divided
  • 0.33333334326744 cup all-purpose flour
  • 1 teaspoon sea salt
  • 0.5 teaspoon baking powder
  • 0.5 cup fine bread crumbs
  • canola oil for frying
  • 1 tablespoon lemon zest
  • 1 teaspoon black truffle salt
Instructions:
  • Place 6 eggs in a large pot of water with a sous vide insert. Set temperature to 148.1°F (64.5°C) and cook for 1 hour. Transfer eggs to a bowl of tepid water and let cool for 10 minutes.
  • Gently run the faucet at a low flow. Carefully crack the cooked eggs, allowing the whites to drip away under the running water. Collect the yolks in a bowl.
  • Mix together the flour, sea salt, and baking powder in a small bowl. Beat the remaining egg in another bowl. Spread breadcrumbs evenly on a plate.
  • Heat a generous 1 1/2 inches of oil in a large saucepan until it reaches 360°F (182°C).
  • Coat each yolk in flour, then egg wash, and breadcrumbs. Fry in hot oil until golden brown, approximately 30 seconds. Drain on a paper towel and top with lemon zest and truffle salt.
