Crispy golden fried salmon fillets, coated in zesty lemon pepper cornmeal for a quick and easy weeknight dinner.
Ingredients:
  • 0.33333334326744 cup vegetable oil for frying
  • 1.5 cups cornmeal
  • 1 tablespoon seasoned salt
  • 1 tablespoon kosher salt
  • 0.5 tablespoon lemon pepper
  • 0.5 teaspoon ground white pepper
  • 6 salmon fillets
Instructions:
  • Using a cast iron skillet, gently warm the oil to 350 degrees F (175 degrees C).
  • Combine cornmeal, flour, seasoned salt, kosher salt, lemon pepper, and white pepper in a medium bowl and whisk until well mixed.
  • Whisk eggs in a separate bowl for 10 seconds.
  • Take each piece of salmon and immerse it into the beaten eggs until it's fully coated. Then, cover the salmon entirely with the cornmeal mixture, making sure to shake off any extra coating.
  • Fry salmon in batches in hot oil until a golden brown crust forms, flipping halfway through, for 8 to 10 minutes. Drain on a paper towel-lined plate.
