Delicious pan-fried razor clams coated in crispy Japanese panko breadcrumbs, frozen for best crunch.
Ingredients:
  • 6 razor clams, cleaned and dried
  • 2 eggs
  • 1 cup all-purpose flour
  • salt to taste
  • black pepper to taste
  • garlic powder to taste
  • 1 cup panko (Japanese bread crumbs)
  • 0.25 cup shredded Parmesan cheese
  • 0.33333334326744 cup vegetable oil for frying
Instructions:
  • Prepare a flat baking sheet lined with wax paper to fit in the freezer. Set it aside for later use.
  • In a bowl, whisk eggs. In a separate bowl, combine flour, salt, pepper, and garlic powder. Mix panko and Parmesan cheese in another bowl. Coat clams with flour, dip in eggs, then in the panko mixture, pressing evenly. Arrange on a baking sheet, cover with wax paper, and freeze until firm.
  • In a skillet over medium-high heat, heat oil until shimmering. Cook clams until golden brown on each side for about 1 minute. Be careful not to overcook to keep them tender. Drain on paper towels.
