Irresistible Parmigiana-style pork chops with crispy panko crust, and extra marinara sauce if desired.
Ingredients:
  • 4 (5 ounce) boneless, thin cut pork loin chops
  • salt and freshly ground black pepper to taste
  • 0.33333334326744 cup all-purpose flour
  • 2 large eggs, beaten
  • 0.25 cup panko bread crumbs
  • 0.25 cup Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 cup marinara sauce
  • 3 ounces shredded mozzarella cheese
  • 2 tablespoons minced fresh flat leaf parsley
Instructions:
  • Preheat the oven to 400°F (200°C) to get it ready for cooking.
  • Tenderize pork chops to a uniform 1/4- to 3/8-inch thickness using a meat mallet. Season generously with salt and pepper on both sides.
  • In three separate shallow dishes, set up stations with flour and eggs in the first two, and a mixture of panko bread crumbs, Parmesan cheese, and Italian seasoning in the third.
  • Coat each pork chop in flour, shake off excess. Then, dip into egg mixture, let excess drip off. Coat in crumb mixture, place on plate.
  • In a large skillet, heat oil over medium-high heat until hot. Fry chops for 2 minutes on each side. Remove from heat and transfer to a baking dish. Top each chop with 1/4 cup of sauce and cheese.
  • Place the dish in the oven until the sauce is heated and the cheese is gooey, about 6 to 8 minutes. Garnish with fresh parsley just before serving.
