"Enjoy a delicious breakfast by steaming couscous in a couscoussière or soaking it in boiling water for 10 minutes until fluffy."
Ingredients:
  • 200 g couscous
  • 30 g raisins
  • 30 g flaked almonds
  • 30 g pine nuts
  • 30 g shelled unsalted pistachios
  • 2-3 pinches of ground cinnamon (more or less to taste)
  • 2-4 tablespoons icing sugar (more or less to taste)
  • 1 teaspoon rose water optional
  • 1 orange optional
  • 200 ml skimmed milk
Instructions:
  • Place couscous in a bowl and cover it with 500ml boiling water. Allow it to sit for 10 minutes until water is absorbed, then fluff with a fork. In another bowl, soften raisins in lukewarm water for 15 minutes, then drain. Toast almonds and pine nuts in a dry frying pan over medium heat for 2 to 3 minutes until golden. Roughly chop pistachios and mix into the couscous. Add raisins, almonds, pine nuts, cinnamon, sugar, and rosewater if using, then gently combine. Serve warm or at room temperature with orange zest as a garnish. Warm milk separately for pouring over.
