A comforting and easy-to-make breakfast featuring all your favorite ingredients. Great for a gentle start to your day.
Ingredients:
  • 1 fresh red chilli
  • 2 large free-range eggs
  • olive oil
  • 6 rashers of higher-welfare smoked bacon
  • 4 crumpets
  • brown sauce or maple syrup
Instructions:
  • Finely chop the chilli and mix with a pinch of sea salt and black pepper in a bowl. Whisk in the eggs. Heat oil in a non-stick pan, fry bacon until crispy. Dip crumpets in egg mixture and fry until golden on both sides. Serve with bacon, brown sauce or maple syrup, and sprinkle with extra chopped chilli. Enjoy this heavenly dish!
