Transform stale bread into flavorful veggie muffins for a wholesome treat!
Ingredients:
  • 400 g Mediterranean veg
  • 150 g leafy green veg
  • 25 ml vegetable oil
  • 400 g white or brown stale bread
  • 8 free-range eggs
  • 350 ml milk
  • 125 g hard cheese
Instructions:
  • 1. Preheat the oven to 180°C/350°F/gas 4, and prepare a 12-hole muffin tin with paper cases. 2. Chop Mediterranean veg and shred leafy greens. Cook in a pan with oil until softened and stir in greens until wilted. Let cool. 3. Cube bread, mix eggs with milk, pour half over bread, add cheese, and let bread soak up the mixture. 4. Combine veg mixture with bread mixture, season, and divide into muffin cases. Top with remaining beaten egg. 5. Bake for 25 minutes until golden and set. Enjoy warm or at room temperature.
