French toast with berry compote

Ingredients:
  • 4 eggs
  • 83.33 gm light cream
  • 84.98 gm reduced-fat milk
  • 107.50 gm caster sugar
  • 2.50 gm ground cinnamon
  • 25g butter, chopped
  • 8 slices thick fruit bread
  • 200g vanilla yoghurt, to serve
  • 300g frozen mixed berries
Instructions:
  • In a small saucepan, combine sugar and 2 tablespoons of cold water. Stir over low heat until the sugar dissolves. Increase heat to high and bring mixture to a boil. Cook for 3 minutes or until slightly thickened. Remove from heat and stir in the berries. Set aside.
  • Combine eggs, cream, and milk in a bowl and whisk until smooth.
  • Mix sugar and cinnamon in a shallow dish. Heat half of the butter in a large non-stick frying pan over medium heat. Dip one slice of bread at a time in the egg mixture until saturated. Cook the bread for 2 minutes on each side until it turns golden brown. Take the bread out of the pan and coat it with the sugar mixture. Keep warm by covering. Repeat the process with the rest of the butter, bread, egg mixture, and sugar mixture.
  • Present the toast alongside compote and yogurt.
