Irresistible muffins - perfect for breakfast or a wholesome school snack!
Ingredients:
  • 2 eggs
  • 250ml buttermilk
  • 60ml olive oil
  • 57.20 gm honey
  • 260g muesli
  • 165g plain flour
  • 1.25 gm bicarbonate of soda
  • 1 orange
Instructions:
  • - Preheat the oven to a toasty 200°C and prepare a 12-cup muffin pan by lining it with paper cases.
  • In a large bowl, vigorously whisk together eggs, buttermilk, oil, and honey. In a separate bowl, mix muesli, flour, and baking soda. Grate the orange zest into the dry ingredients. Squeeze the orange to extract the juice and add 1/2 cup of the juice to the egg mixture.
  • Combine wet ingredients with dry ingredients, stirring swiftly with a wooden spoon until just incorporated. It is okay if the mixture is lumpy and not evenly combined.
  • Transfer the mixture into paper cases, bake until golden and cooked through (about 20 minutes), let cool for 5 minutes, then transfer to a wire rack to cool completely.
