Loaded Breakfast Bake: Potatoes, bacon, cheese, and eggs baked together for a stunning and easy company-worthy dish.
Ingredients:
  • 3 large baking potatoes, peeled and diced
  • 0.5 cup chopped red bell pepper
  • 2 cloves garlic, chopped
  • 0.5 cup chopped onion
  • salt and pepper to taste
  • 10 slices bacon
  • 4 eggs
  • 1 teaspoon milk
  • 1 cup shredded Cheddar cheese
Instructions:
  • In a large skillet over medium heat, heat olive oil. Add in potatoes, red bell pepper, garlic, and onion. Cook, stirring occasionally until potatoes are tender. For quicker cooking, cover the pan with a lid.
  • Preheat your oven to 350°F (175°C), then line the bottom of an 8 or 9 inch cake pan with parchment paper and set it aside.
  • 1. Cook bacon until crispy in a skillet or microwave. Drain, crumble, and set aside. 2. Sprinkle cheese in the pan. 3. Evenly distribute bacon crumbles over the cheese. 4. Spread potato mixture in the pan. 5. Whisk eggs, milk, salt, and pepper, then pour evenly over ingredients in the pan.
  • Bake in a preheated oven for 20 minutes until the egg is perfectly set. Once done, run a knife around the edges, flip onto a plate, peel off the parchment paper, and savor every bite.
