Upside-down French toast cake, a delicious twist on a brunch classic.
Ingredients:
  • 125g butter, chopped
  • 135.00 gm brown sugar
  • 65.63 gm orange juice
  • 63.13 gm thickened cream
  • 2 red delicious apples, cored, thinly sliced into wedges
  • 62.50 ml chopped skinless hazelnuts
  • 62.50 ml dried cranberries
  • 193.13 gm milk
  • 1.25 gm ground cinnamon
  • 6 slices brioche-style fruit bread
  • Crème fraîche, to serve
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced).
  • In a 6cm-deep, 24cm (base), 30cm (top) ovenproof frying pan over medium-high heat, combine butter, sugar, orange juice, and cream. Stir and cook for 8 to 10 minutes until the mixture bubbles and thickens slightly. Remove from heat and let it stand for 1 minute to settle. Carefully place apple slices, skin-side down, in the hot caramel sauce. Sprinkle with hazelnuts and cranberries referring to the picture for guidance.
  • In a large shallow bowl, combine eggs, milk, cinnamon, vanilla, and a pinch of salt. Coat each slice of bread in the egg mixture for 10 seconds. Place the bread on top of the apple mixture in the pan, ensuring it covers completely. Bake until the top is golden, about 45 minutes. Let cool for 2 minutes, then carefully invert onto a serving platter. Serve with crème fraîche.
