Satisfy your morning cravings with this hearty and effortless breakfast sandwich.
Ingredients:
  • 40g butter
  • 400g button mushrooms, sliced
  • Salt & freshly ground pepper
  • 4 eggs
  • 400g sliced leg ham
  • 8 slices thick white bread
  • 60g baby spinach leaves
Instructions:
  • In a large non-stick frying pan over medium-high heat, melt the butter with oil. Cook mushrooms until soft and golden, about 8-10 minutes, stirring often. Season generously with salt and pepper, then transfer to a bowl and cover with foil to keep warm.
  • Melt the rest of the butter in a frying pan over medium-high heat. Crack the eggs in the pan and cook until the bases are crisp and golden, about 2-3 minutes. Flip them over and cook for an additional minute, if preferred. Set aside and keep warm. Cook the ham in the same pan for 1-2 minutes on each side until lightly golden and heated through.
  • Toast the bread, then generously butter one side of each slice. Place spinach leaves, mushrooms, ham, and egg on 4 of the slices. Serve the remaining slice on the side. Enjoy immediately.
