Brie and cranberry crinkle pie recipe

Trendy crinkle pie with brie, cranberry sauce on flaky filo pastry - a delicious starter for any occasion!
Ingredients:
  • 11 filo pastry sheets
  • 125g butter, melted, plus extra for greasing
  • 200g triple cream brie, cut into thin slices
  • 135g (1/3 cup) whole cranberry sauce
  • 125ml (1/2 cup) milk
  • 125ml (1/2 cup) thickened cream
  • 20.00 ml fresh thyme leaves
Instructions:
  • Preheat the oven to 180C/160C fan forced, then generously butter a 20 x 30cm slice pan.
  • Lay the first pastry sheet on a clean work surface. Cover the rest of the sheets with a dry tea towel followed by a damp tea towel. Brush the pastry with melted butter. Fold the pastry from one end to create a 2cm wide strip resembling an accordion. Arrange this strip at one end of the dish. Repeat with the rest of the pastry sheets until the dish base is completely covered.
  • Layer the brie between the filo sheets and generously spoon heaping teaspoons of cranberry sauce on top.
  • In a jug, combine the eggs, milk, and cream, then season to taste. Pour the mixture over the filo, sprinkle with thyme, and bake for 25 minutes until golden and crisp. Let it cool for 5 minutes before serving.
