Baked brie and cranberry in a cob

Elevate your cheese platter with a festive baked brie and cranberry cob.
Ingredients:
  • 450g white cob loaf
  • 200g whole brie round
  • 146.25 gm whole berry cranberry sauce
  • 2 tsp fresh thyme leaves
  • Toasted flaked almonds, to serve
  • Honey, to serve
Instructions:
  • Preheat oven to 200°C (180°C fan-forced).
  • 1. Slice the top off the cob loaf about 3cm down, then set the lid aside. Scoop out the bread from the center to make room for the brie, discarding the center bread. 2. Spread cranberry sauce inside the base and around the hole. 3. Place the brie on top, sprinkle with thyme, and season with salt and pepper.
  • Cover dish with a lid and wrap with foil. Bake on a tray for 35 minutes or until cheese is melted. Let it rest for 5 minutes, then uncover, sprinkle with almonds and honey, and serve.
