Broccoli, Rice and Chili Beans

Quick and delicious skillet chili with bacon, rice, and veggies. Bursting with flavor, ready in minutes!
Ingredients:
  • 6 slices bacon, cut into 1-inch pieces
  • 1 cup uncooked instant rice
  • 2 cans (16 oz each) spicy chili beans in sauce, undrained
  • 1 bag (12 oz) frozen broccoli cuts, thawed and drained
  • 1 cup shredded process cheese (4 oz)
Instructions:
  • Fry bacon in a 10-inch skillet over medium-high heat until crispy, stirring occasionally. Remove and drain on paper towels. Keep aside.
  • In a skillet, combine all remaining ingredients except for cheese and bacon. Bring to a boil, then simmer over medium heat.
  • Simmer covered for 5 minutes, then remove from heat. Sprinkle with bacon and cheese, cover, and let stand for about 5 minutes until liquid is absorbed and cheese is melted.
