Broccoli and Carrot Stir Fry

Quick and easy Chinese stir-fried broccoli and carrots in delicious peanut oil, perfect as a standalone dish or paired with meat.
Ingredients:
  • 5.5 cups broccoli florets
  • 1 carrot, thinly sliced
  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 1 teaspoon chicken bouillon granules, or to taste
  • salt to taste
  • 2 tablespoons peanut oil
Instructions:
  • Bring a pot of salted water to a boil. Blanch broccoli for 2 minutes until vibrant green. Shock in ice water to preserve color and crispness. Drain.
  • Return the pot of water to a rolling boil, then gently drop in the sliced carrot and cook for just 1 minute. Drain the carrot before proceeding further.
  • Combine water and cornstarch in a bowl until a smooth mixture forms. Stir in chicken granules and salt until fully incorporated.
  • In a hot wok or large skillet, saute broccoli and carrots in peanut oil for 2 minutes. Next, add the cornstarch mixture and stir until vegetables are evenly coated, about 1 to 2 minutes.
