Satisfying vegetarian casserole, perfect for Thanksgiving or as a meatless entree.
Ingredients:
  • 2 pounds fresh broccoli florets
  • 2 eggs, beaten
  • 1 onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 0.5 cup mayonnaise
  • 10 ounces dry bread stuffing mix
  • 0.5 cup butter, melted
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  • Blanch broccoli in a pot of salted boiling water until slightly tender. Drain well.
  • Mix together eggs, onion, mushroom soup, and mayonnaise in a large bowl.
  • Arrange the broccoli in the baking dish, then generously smother it with the luscious mayonnaise sauce. Next, evenly sprinkle the stuffing mix on top, followed by a lavish drizzle of butter or margarine and a generous sprinkling of shredded cheese to finish it off.
  • Preheat the oven to 350°F (175°C) and bake for 30 minutes.
