Cheesy broccoli cauliflower casserole topped with crispy croutons for the perfect crunch.
Ingredients:
  • 2 cups broccoli
  • 2 cups cauliflower
  • 2 eggs
  • 1 cup shredded Cheddar cheese, divided
  • 0.5 cup mayonnaise
  • 0.5 cup chopped onion
  • 0.5 cup butter, melted
  • 1 (15 ounce) package seasoned croutons, crushed
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect cooking environment.
  • Cook broccoli and cauliflower in individual saucepans filled with water until tender, for about 3 to 4 minutes. Drain and place in an 11x7-inch baking dish.
  • Whisk eggs in a bowl until creamy; mix in 1/2 cup Cheddar cheese, mayonnaise, and onion, then drizzle over vegetables. Top with melted butter, sprinkle with the remaining 1/2 cup Cheddar cheese, and evenly scatter crushed croutons on top.
  • Bake until golden and bubbling in the preheated oven for approximately 40 minutes.
