Keto-friendly chicken divan casserole with cauliflower and broccoli, a healthy twist on a French classic.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 4 cups broccoli florets, or to taste
  • 3 tablespoons butter
  • 1 small onion, chopped
  • 1.5 teaspoons minced garlic
  • 0.5 teaspoon garlic salt
  • 0.125 teaspoon dried parsley
  • salt and ground black pepper to taste
  • 3 cups cauliflower florets
  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • 0.5 cup mayonnaise
  • 2 cups shredded Cheddar cheese
Instructions:
  • Add chicken breasts to a large pot, covering them with water, then bring to a boil. Cook until chicken is fully cooked and juices run clear, about 10 minutes. Ensure chicken reaches a safe internal temperature of at least 165°F (74°C) with a meat thermometer. Remove chicken from the water.
  • Set up a steamer in a saucepan, fill with water to just below the steamer, and bring to a boil. Steam broccoli until tender, for about 3 to 6 minutes. Then, chop the broccoli.
  • Preheat your oven to 350°F (175°C).
  • In a deep saucepan, gently melt butter over low heat. Sauté onion and garlic until onion is soft, about 8 to 12 minutes. Stir in garlic salt, parsley, salt, and pepper.
  • Blend cauliflower in a food processor until it resembles rice. Incorporate the cauliflower and chicken broth into the onion mixture and cook until broth is absorbed, approximately 10 minutes. Pour in heavy cream and lemon juice and simmer uncovered for another 10 minutes, stirring occasionally. Remove from heat, stir in mayonnaise, and allow sauce to cool and thicken.
  • Shred the chicken using two forks into small, bite-sized pieces, then mix half of it into the sauce.
  • Spread the remaining pulled chicken on the bottom of the casserole dish. Arrange the steamed broccoli on top, then drizzle the cauliflower sauce over the broccoli. Sprinkle with Cheddar cheese and cover with aluminum foil.
  • Place the dish in the preheated oven for 30 minutes. Uncover and bake until the cheese on the edges has a golden brown color, approximately 10 minutes. Allow the casserole to cool for 5 to 10 minutes before slicing it into 6 equal portions.
