Make-Ahead Chicken Divan Casserole: A delicious blend of leftovers and fresh ingredients for a hassle-free family dinner.
Ingredients:
  • 1.5 cups grated Cheddar cheese
  • 0.5 cup shredded Parmesan cheese, or more to taste
  • 4 cups fresh broccoli florets
  • 1 tablespoon salted butter
  • 1 (8 ounce) package sliced fresh mushrooms
  • 0.5 cup diced onion
  • 3 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 0.5 cup sour cream
  • 0.5 cup milk
  • 0.25 cup mayonnaise
  • salt and ground black pepper to taste
  • 2 cups cooked rice, or more to taste
  • 5 cups shredded cooked chicken, or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Mix together the sharp Cheddar cheese and 1/2 cup of tangy Parmesan cheese in a bowl, then set it aside.
  • Set up a steamer by filling a saucepan with water up to just below the steamer. Bring the water to a boil, then add the broccoli. Cover and steam until tender, for about 2 to 6 minutes.
  • Heat a generous amount of butter in a large skillet over medium heat. Cook mushrooms, onions, and garlic until soft, about 5 to 7 minutes.
  • Combine condensed soup, sour cream, milk, and mayonnaise in a large bowl. Mix in 1/2 cup of the reserved Cheddar-Parmesan mixture. Season with salt and pepper. Stir in sauteed vegetables to combine.
  • Pour half a cup of the sauce into the base of a 9x13-inch casserole dish. Layer cooked rice on top, followed by cooked broccoli and cooked chicken. Pour the rest of the sauce over the top, then pat down and smooth with a spatula.
  • Bake in the oven for 30 minutes. Sprinkle with the remaining Cheddar-Parmesan mixture, and extra Parmesan if desired, and bake until browned, about 15 minutes longer.
