Creamy broccoli and cheese soup: Broccoli simmered in flavorful chicken broth, mixed with velvety milk, melted American cheese, and sautéed onion in butter - a kid-friendly favorite.
Ingredients:
  • 3 (14.5 ounce) cans chicken broth
  • 3 (10 ounce) packages frozen chopped broccoli
  • 6 tablespoons margarine
  • 1 medium onion, chopped
  • 0.5 cup all-purpose flour
  • 2 cups milk
  • 1.5 pounds processed cheese food (eg. Velveeta), cubed
  • 1 pinch ground white pepper
Instructions:
  • In a large pot over medium heat, gently simmer the broth. Add broccoli to the simmering broth and cook for 15 minutes.
  • In a skillet over medium heat, melt margarine and sauté onion until tender. Stir in flour until it forms a paste, then gradually add milk and stir until thickened.
  • Combine the savory onion mixture with the tender broccoli in the pot and mix thoroughly. Gently fold in the creamy cheese until it melts to perfection; be sure not to bring it to a boil. Finish by seasoning with a touch of aromatic white pepper.
