Quick and delicious recipe inspired by Panera Bread, ready in under 30 minutes.
Ingredients:
  • 4 tbsp salted butter, divided
  • 1/2 cup chopped yellow onion (from 1 small (8-oz.) onion)
  • 1/4 cup all-purpose flour
  • 3 cups water
  • 1 1/2 cups heavy cream
  • 2 tbsp jarred chicken stock base (such as Better than Bouillon)
  • 2 cups (6 oz) finely chopped broccoli florets (from 1 small crown broccoli)
  • 1/2 cup carrot matchsticks (from 1 [10-oz.] bag)
  • 6 oz pre-shredded sharp cheddar cheese (about 1 1/2 cups)
  • 2 oz processed cheese, cubed (such as Velveeta)
  • 2 tsp Dijon mustard
  • 2 tsp hot sauce (such as Tabasco)
  • 1 tsp paprika
  • 1 tsp white pepper
  • 3/4 tsp kosher salt
Instructions:
  • Create the soup base by melting 1 tablespoon of butter in a large pot over medium heat. Saute the onions until soft and translucent for 3 to 4 minutes. Incorporate the remaining 3 tablespoons of butter and stir until melted for about 1 minute. Add the flour and stir until it bubbles and lightens to a golden brown, approximately 1 minute. Slowly whisk in the water and cream until smooth, then add the stock base.
  • Combine the broccoli and carrots in the soup and simmer gently until tender, about 10 to 12 minutes. Turn off the heat and melt in the cheddar cheese and processed cheese, stirring continuously for about 1 minute. Add the mustard, hot sauce, paprika, pepper, and salt.
