Get ready to dazzle everyone with this irresistible grilled salmon recipe that's sure to be in high demand!
Ingredients:
  • 46.00 gm vegetable oil
  • 4 x 160g salmon fillets with skin
  • 450g thin hokkien noodles
  • Zest and juice of 1 lemon
  • 24.40 gm fish sauce
  • 3 long red chillies, seeds removed, thinly sliced
  • 40.00 ml finely chopped ginger
  • 10.00 gm caster sugar
  • 500g broccoli, cut into small florets
  • 250g bean sprouts
  • 6 spring onions, thinly sliced on an angle
  • 250.00 ml small coriander leaves
Instructions:
  • Heat a generous amount of oil in a pan until sizzling, then sear the salmon skin-side down for a quick 2 1/2 minutes on medium-high heat. Flip and continue cooking for another 1 1/2 minutes or until desired doneness. Rest under a loose cover to keep it warm.
  • Cook noodles as per package instructions, drain, and toss with a bit of the reserved oil to prevent sticking. In a bowl, mix lemon zest, lemon juice, fish sauce, and 1/4 cup (60ml) water. Heat the remaining oil in a large wok.
  • Sauté the chili, garlic, and ginger for 1 minute. Mix in sugar. Toss in broccoli and stir-fry for another minute. Add lemon mixture, noodles, and sprouts, stir until warmed through. Take off heat and gently mix in onion and coriander. Plate the broccoli chili noodles among 4 plates and serve with the salmon.
