Upgrade your cornbread with broccoli, cottage cheese, onion, eggs, and Cheddar cheese for a moist and flavorful twist that pairs perfectly with chili.
Ingredients:
  • 4 large eggs
  • 1 cup cottage cheese
  • 0.75 cup butter, melted
  • 2 (8.5 ounce) packages corn bread/muffin mix
  • 1 (10 ounce) package frozen chopped broccoli, thawed
  • 1 large onion, chopped
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 9x13-inch baking dish.
  • In a large bowl, blend eggs, cottage cheese, and melted butter until fully mixed. Add cornbread mix and stir until just moistened. Gently fold in broccoli, onion, and 1 cup Cheddar cheese. Transfer mixture to a baking dish and sprinkle with the remaining 1/2 cup Cheddar cheese before baking.
  • Bake in the preheated oven for 35-40 minutes or until a toothpick comes out clean. Allow to cool in the baking dish for 10 minutes before slicing and serving warm.
