Cheesy cornmeal loaf with onion and broccoli, perfect pairing with beef.
Ingredients:
  • 4 eggs
  • 1 (10 ounce) package chopped frozen broccoli, thawed and drained
  • 1 cup cottage cheese
  • 1 onion, chopped
  • 0.5 cup butter, melted
  • 1 (8.5 ounce) package self-rising cornmeal
  • 1 teaspoon salt
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), and give your 11x7 inch baking pan a light greasing.
  • Combine cornmeal mix and salt in a large mixing bowl. In another bowl, mix eggs, cottage cheese, onion, and butter. Stir the egg and cheese mixture into the cornmeal mix. Gently fold in the broccoli, then pour the batter into the prepared pan.
  • Bake in a preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
