Moist and flavorful broccoli cornbread made extra delicious with creamy cottage cheese.
Ingredients:
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1.5 teaspoons white sugar
  • 3 eggs
  • 1 (10 ounce) package frozen chopped broccoli
  • 12 ounces cottage cheese
  • 5 tablespoons margarine, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine cornmeal, flour, salt, baking powder, and sugar in a large bowl, then create a well in the center.
  • Combine eggs, thawed broccoli, cottage cheese, and melted butter in a bowl. Pour the mixture into the flour and stir until just combined.
  • Transfer the batter into a buttered 9x13 inch baking dish.
  • Place in a hot 350 degree F (175 degrees C) oven and bake until a beautiful golden brown color develops, about 30 minutes.
