Delicious broccoli salad with almonds, bacon, and peas in a honey vinegar dressing. Perfect for summer gatherings!
Ingredients:
  • 5-6 cups fresh broccoli florets (about 1 pound of florets)
  • 1/2 cup toasted slivered almonds
  • 1/2 cup cooked, crumbled bacon
  • 1/4 cup red onion, chopped
  • 1 cup frozen peas, thawed (or fresh peas if you can get them)
  • For the dressing:
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1/4 cup honey
Instructions:
  • Blanch the broccoli: In a large pot of salted boiling water, blanch the broccoli florets for 1-2 minutes based on your desired crunchiness. For bright green and crunchy broccoli, cook for 1 minute; for a firmer texture, cook for 2 minutes. Be cautious not to exceed 2 minutes to prevent mushiness. Drain the broccoli and shock in ice water to halt the cooking process. Once cooled, ensure the broccoli is well-drained by patting dry with a clean tea towel or using a salad spinner to remove excess water.
  • Prepare the dressing by mixing mayonnaise, cider vinegar, and honey until smooth.
  • Combine fresh broccoli florets, crunchy almonds, savory crumbled bacon, diced onion, and sweet peas in a generous serving bowl. Pour the dressing over the salad and gently toss until everything is perfectly coated. Adjust the amount of dressing to your liking.
  • Allow the dish to cool completely before enjoying.
