Broccoli with Pine Nuts and Cranberry Relish

Create a vibrant side dish in just 35 minutes with colorful broccoli and berries.
Ingredients:
  • 1 1/2 pounds broccoli (stems and flowerets), cut into 2 x 1/2-inch pieces
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries
  • 1/2 cup packed brown sugar
  • 1/4 cup water
  • 1 tablespoon cider vinegar
  • 1/8 teaspoon ground cinnamon
  • 2 tablespoons pine nuts or slivered almonds
Instructions:
  • Bring 1 inch of water in a 3-quart saucepan to a boil. Add broccoli and simmer on low for 7 to 12 minutes until tender. Drain and stir in salt.
  • Bring the remaining ingredients, excluding pine nuts, to a boil in a 1-quart saucepan. Reduce heat, cover, and simmer for 10 to 13 minutes, stirring occasionally until the cranberries have mostly popped and the sauce has thickened.
  • In a skillet, toast pine nuts over medium-high heat for 4 to 7 minutes until golden brown. Top broccoli with warm relish and pine nuts before serving.
