Broccoli with Roasted Garlic and Tomatoes

Flavorful roasted garlic and tomato broccoli side dish.
Ingredients:
  • 4 large cloves garlic
  • 3 cups fresh broccoli florets
  • 1 tablespoon olive oil
  • 1 cup grape tomatoes
  • 2 tablespoons butter, softened
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
Instructions:
  • Preheat oven to 425°F. Wrap garlic in a double layer of heavy-duty foil after drizzling it with 1 teaspoon of water. Seal the foil tightly and bake for 20 minutes until garlic is golden and soft. Transfer the roasted garlic to a bowl and mash with a fork.
  • Preheat the oven to 450°F. Coat a cast-iron skillet or small shallow roasting pan with cooking spray. Toss broccoli with oil and roasted garlic in the skillet or pan, then spread it out in a single layer.
  • Roast broccoli uncovered for 10 minutes, or until beautifully browned. Stir in tomatoes, butter, salt, and pepper, then roast for an additional 12 minutes until the tomato skins just begin to split.
