Broccoli-Rice Bake

Quick and easy broccoli-rice bake made with Bisquick®, ready in just 40 minutes.
Ingredients:
  • 1 1/2 lb broccoli, cut into bite-size pieces
  • 2 cups uncooked instant brown rice
  • 1 can (14 oz) vegetable broth
  • 1 can (10 3/4 oz) condensed cream of broccoli soup
  • 1 jar (2 oz) diced pimientos, drained
  • 1/4 teaspoon pepper
  • 2 tablespoons firm butter or margarine
  • 1/2 cup Original Bisquick™ mix
Instructions:
  • Preheat the oven to 425°F. Boil an inch of water in a 2-quart saucepan. Add the broccoli, bring to a boil again, then cover and simmer on medium heat for about 5 minutes until the broccoli is crisp-tender. Drain well before using.
  • Combine the broccoli, rice, broth, soup, pimientos, and pepper in a 2-quart casserole dish without greasing it.
  • Cover and bake for 20 minutes. In a medium bowl, use a pastry blender or crisscross two knives to cut the butter into the Bisquick mix until crumbly.
  • Sprinkle the crumbly mixture over the broccoli and bake uncovered for an additional 8 to 10 minutes until the top is lightly browned.
