Prepare Cheesy Broccoli Rice Bake in advance for a flavorful, hassle-free side dish to elevate any meal.
Ingredients:
  • 1 cup uncooked regular long-grain white rice
  • 2 cups water
  • 1 tablespoon butter or margarine
  • 1 large onion, chopped (1 cup)
  • 1 loaf (16 oz. box) VELVEETA™ Original Cheese, cut into cubes
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 2/3 cup milk
  • 1/4 teaspoon pepper, if desired
  • 2 cups fresh broccoli florets (1/2 inch)
  • 1 cup fine soft bread crumbs (about 1 1/2 slices bread)
  • 1 tablespoon butter or margarine, melted
Instructions:
  • Preheat oven to 350°F and generously spray a 13x9-inch (3-quart) glass baking dish with cooking spray. Follow package instructions to cook the rice in water.
  • In a 10-inch skillet over medium-high heat, melt 1 tablespoon of butter. Sauté the onion until crisp-tender. Lower the heat to medium and mix in the cheese, soup, milk, and pepper. Stir frequently until the cheese is melted.
  • Combine the broccoli and rice, then transfer to a baking dish. Mix bread crumbs with 1 tablespoon of melted butter in a small bowl and sprinkle over the rice mixture.
  • Bake without covering for 30-35 minutes until golden brown on top and bubbly around the edges.
