Spicy broccoli casserole: Baked broccoli with rice, onions, celery, creamy mushroom soup, and zesty Jalapeno cheese spread.
Ingredients:
  • 1 cup uncooked white rice
  • 5 tablespoons margarine
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 (10 ounce) package chopped frozen broccoli, thawed and drained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (8 ounce) jar processed cheese spread with jalapeno
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Bring 2 cups of water to a boil in a saucepan. Stir in rice, cover, and simmer for 20 minutes on low heat.
  • In a skillet over medium heat, melt margarine until sizzling. Cook onions and celery until soft and fragrant.
  • Mix onions, celery, cooked rice, broccoli, mushroom soup, and processed cheese spread in a 2 quart casserole dish until well combined.
  • Place in a hot oven and bake for 35 minutes.
