Prosciutto-wrapped broccolini: a simple and delicious side dish.
Ingredients:
  • 2 bunches broccolini
  • 6 slices prosciutto
  • 60ml (1/4 cup) extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 1 long fresh red chilli, thinly sliced
  • 1 lemon, zest finely grated, juiced
  • 20g (1/2 cup) panko breadcrumbs
Instructions:
  • Boil the broccolini in a large saucepan for 5 minutes until tender-crisp. Drain and allow it to cool slightly. Divide into 6 bundles and wrap each with prosciutto.
  • In a frying pan over medium heat, heat 1 1/2 tbs of oil until shimmering. Cook the bundles, turning frequently, for about 3 minutes until they turn golden. Transfer to a plate.
  • Pour the rest of the oil into the pan, then toss in the garlic, chili, and lemon zest. Sauté for 1 minute until fragrant. Next, mix in the breadcrumbs and cook for 4 minutes until they turn golden brown. Finish by squeezing lemon juice over the broccolini wraps and topping them with the panko mixture. Enjoy!
