Broiled salmon with dill and lemon - a zesty weeknight delight.
Ingredients:
  • 2 pounds salmon, skinned and deboned
  • 2 tablespoons olive oil
  • 1 lemon
  • 0.5 tablespoon chopped fresh dill, or more to taste
  • 0.5 tablespoon garlic powder, or more to taste
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Coat salmon with olive oil. Slice lemon in half, reserving half. Cut reserved half into 1/4-inch thick slices. Place slices on broiler pan and arrange salmon on top. Sprinkle with dill, garlic powder, salt, and pepper. Drizzle lightly with lemon juice.
  • Broil in the center of the preheated oven until easily flaked with a fork and still juicy, 15 to 20 minutes.
