Sweet-spicy marinade with brown sugar, soy sauce, olive oil, lemon juice, red pepper flakes, garlic, onion powders, and fresh cilantro elevates broiled salmon.
Ingredients:
  • 1.5 pounds fresh salmon fillet with skin removed
  • 0.25 cup red wine vinegar
  • 0.25 cup olive oil
  • 0.25 cup soy sauce
  • 0.25 cup water
  • 1 tablespoon lemon juice
  • 0.5 teaspoon red pepper flakes, or to taste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons chopped fresh cilantro
  • 0.33333334326744 cup brown sugar, packed
Instructions:
  • In a blender, combine vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar. Blend until sugar dissolves. Pour over salmon in a dish, cover, and refrigerate for at least 2 hours.
  • Cover a broiling pan with foil. Take out the salmon from the marinade and put it on the pan; season with salt and pepper. Pour the leftover marinade into a saucepan.
  • Preheat the broiler on low heat.
  • Broil salmon 6 inches from the heat for 5 minutes, brush with marinade, then broil for an additional 5 to 10 minutes, brushing with more marinade 2-3 times. Salmon is ready when it flakes easily with a fork and is no longer bright red.
  • Simmer the leftover marinade on low heat until it thickens and reduces by one-third, about 5 to 10 minutes. Serve the cooked marinade as a flavorful dipping sauce or drizzle it over the salmon right before serving.
