Kick up those steaks with zesty southwest black bean salsa!
Ingredients:
  • 1/2 cup thick & chunky salsa
  • 1/2 cup Progresso™ black beans, drained, rinsed (from 15- or 19-oz can)
  • 2 tablespoons finely chopped red onions
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 1/2 teaspoons chili powder
  • 4 beef boneless New York strip steaks (1 1/2 pounds)
  • 2 teaspoons chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves
Instructions:
  • Combine the salsa, beans, onion, cilantro, lime juice, and 1/2 teaspoon of chili powder in a bowl. Cover and chill in the refrigerator while you work on the beef.
  • Preheat the oven to broil.
  • Season both sides of the beef with the remaining 1 teaspoon of chili powder and oregano, pressing gently. Place the beef on a rack in a broiler pan. Broil the beef 4 to 6 inches from the heat for 6 minutes, then flip and broil for an additional 2 to 5 minutes for medium doneness. Serve with salsa.
