Scallop dish with brown butter, chanterelles, perfect for guests.
Ingredients:
  • 2 tablespoons butter
  • 0.5 pound chanterelle mushrooms
  • 7 tablespoons butter
  • 1 tomato - peeled, seeded, and chopped
  • 2 tablespoons balsamic vinegar
  • 1 pound scallops
Instructions:
  • In a skillet over medium heat, melt 2 tablespoons of butter. Add chanterelles and cook until tender for 5 to 8 minutes. Transfer to a bowl. In the same skillet, melt the remaining 7 tablespoons of butter over low heat until it turns pale brown and releases a nutty aroma, about 5 minutes.
  • Combine tomato and balsamic vinegar with browned butter, cook until tomato is soft, approximately 2 minutes. Add mixture to the mushrooms.
  • Preheat the broiler with the oven rack positioned 6 inches away from the heat source.
  • Arrange scallops on a broiler pan and broil in the oven until they are just opaque, approximately 2 minutes on each side. Serve the scallops on a platter, garnished with chanterelles and sauce.
