Festive snack blend with popcorn, pretzels, peanuts, and beer - perfect for the holidays!
Ingredients:
  • 8 cups popped popcorn
  • 1 cup mini-pretzel twists
  • 1/2 cup salted cocktail peanuts
  • 1/2 cup brown ale beer
  • 1/4 cup packed brown sugar
  • 1/4 cup brown rice syrup or corn syrup
  • 3 tablespoons butter
  • 1/4 teaspoon salt
Instructions:
  • Preheat the oven to 300°F and line two 15x10x1-inch pans with foil, then give the foil a quick spray of cooking spray.
  • Place popcorn, crunchy pretzels, and roasted peanuts in a large bowl, ready for the next step.
  • In a 2-quart saucepan, simmer ale over medium heat, stirring often, until it reduces to 1/4 cup, approximately 6 minutes. Confirm the measurement by pouring into a glass measuring cup. Return to the saucepan, then add brown sugar, syrup, and butter. Cook over medium heat until bubbly around the edges, stirring occasionally.
  • Lower the heat to medium-low and continue cooking for an additional 5 minutes, stirring occasionally, until the mixture thickens and becomes syrupy. Remove from the heat and gently mix in the salt. Pour the mixture over the popcorn in the bowl and toss until everything is evenly coated. Spread the popcorn mixture onto pans.
  • Bake for 20 minutes, stirring every 5 minutes until mixture is caramelized. Let cool completely for about 1 hour, then break into pieces and store in an airtight container.
