Indulgent chocolate chunk cookies with brown butter for extra richness and chunks of milk chocolate for ultimate decadence.
Ingredients:
  • 1 cup (2 sticks, 8 ounces, 225 g) unsalted butter
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup brown sugar, packed
  • 1/2 cup white sugar
  • 2 large eggs
  • 9 ounces milk chocolate (or semi-sweet or dark if you prefer) bars, roughly chopped into chunks, about 2 cups
  • 1 cup chopped walnuts or pecans (optional)
Instructions:
  • Heat your oven to 350°F.
  • Brown the butter: Melt the butter in a medium stainless steel saucepan over medium heat, whisking frequently. Cook until you smell a nutty aroma and see small browned bits at the bottom of the pan. Be attentive as the butter can quickly go from browned to burnt.
  • Combine dry ingredients: In a bowl, combine flour, salt, baking soda, and cinnamon, whisking vigorously.
  • Cream brown butter, sugars, eggs, and vanilla: In a mixing bowl, combine browned butter and sugars until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and continue beating for 3 minutes.
  • Combine the flour mixture with the wet ingredients in thirds and gently fold in the chocolate chunks and nuts if desired. Chill the dough in the refrigerator for up to two days before baking.
  • Line a baking sheet with Silpat or parchment paper or lightly butter it. Spoon heaping tablespoonfuls of batter onto the sheet, making sure to space them at least 2 inches apart to allow for spreading. You may need to bake in batches.
  • Bake at 350°F for roughly 12 minutes until the cookie edges are lightly browned. Take them out of the oven, allow them to cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
