Brown Rice Pudding

Decadent brown rice pudding with creamy richness and plump raisins, optional.
Ingredients:
  • 1.5 cups heavy cream
  • 1.25 cups water
  • 0.5 cup short-grain brown rice
  • 0.5 cup raisins
  • 1 tablespoon butter, softened
  • 2 teaspoons vanilla extract
Instructions:
  • In a pot, combine heavy cream, water, brown rice, and salt, bringing to a boil. Reduce heat to low, cover, and simmer until liquid is fully absorbed, approximately 80 minutes. Add raisins to the pot and continue cooking until they plump up, around 10 more minutes.
  • In a bowl, vigorously whisk together the egg yolks, sugar, and cinnamon. Gradually drizzle this mixture into the pot with the rice while continuously stirring. Cook and stir until it thickens for about 6 minutes. Take it off the heat and blend in the butter and vanilla extract.
