Nutty brown rice pudding with cinnamon and almond essence for a comforting treat.
Ingredients:
  • 4 cups water
  • 2 cups uncooked brown rice
  • 0.75 teaspoon salt
  • 2 cups milk
  • 1 (12 fluid ounce) can evaporated milk
  • 0.5 teaspoon almond extract
  • 1 cup sugar
  • 1 (3 inch) piece cinnamon stick
Instructions:
  • In a saucepan, boil water and brown rice. Stir in salt, reduce heat to low, cover, and simmer for about 50 minutes until rice is tender and liquid is absorbed.
  • Combine the milk, evaporated milk, almond extract, and sugar with the rice, and add the cinnamon stick. Simmer uncovered, stirring often, until the mixture reaches a creamy pudding consistency, around 70 more minutes.
