Indulgent bacon and brown sugar waffles - a quick and decadent treat for relaxed weekend mornings!
Ingredients:
  • cooking spray
  • 8 slices bacon
  • 2 tablespoons brown sugar
  • 3 cups flour
  • 0.5 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 eggs
  • 2.5 cups buttermilk
  • 0.66666668653488 cup vegetable oil
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and spritz a baking sheet with cooking spray.
  • Lay out bacon on the baking sheet, then generously sprinkle with 2 tablespoons of brown sugar. Bake until bacon is crispy and brown sugar is caramelized, which should take around 10 to 15 minutes in the preheated oven.
  • Remove crispy bacon from the pan onto a cutting board. Chop into small pieces and keep to the side.
  • Heat up your waffle iron.
  • Combine flour, 1/2 cup brown sugar, baking powder, baking soda, and salt in a large bowl, whisk until well mixed. In a separate bowl, beat together eggs, buttermilk, vegetable oil, and vanilla. Gently fold the wet mixture into the flour mixture. Add bacon and stir just until combined, being careful not to over mix.
  • Grease the hot waffle iron with cooking spray, then pour in the batter and cook until golden brown. Serve immediately.
