Indulgent brown sugar cake with English toffee bits and mini chocolate chips, ideal for snacking or dessert.
Ingredients:
  • 1 cup light brown sugar, packed
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt, divided
  • 0.5 cup unsalted butter, at room temperature
  • 1 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup mini semisweet chocolate chips
  • 0.5 cup English toffee bits
  • 0.5 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan, setting it aside.
  • In the bowl of an electric mixer, blend flour, sugar, brown sugar, baking soda, and 1/2 teaspoon salt until thoroughly combined. Use a pastry knife or fork to cut in the butter until the mixture looks like coarse meal. Reserve 1/2 cup of the mixture for later use.
  • In a mixing bowl, combine buttermilk, egg, and vanilla extract, whisking until the ingredients are well combined. Transfer the buttermilk mixture to a mixer bowl and mix on medium speed for 4 to 5 minutes. Scrape down the sides of the bowl as needed, then pour the batter into the prepared pan.
  • Mix the saved flour mixture with mini chocolate chips, English toffee bits, pecans, and the rest of the salt in a small bowl until fully combined. Sprinkle the toffee streusel evenly over the cake batter.
  • Bake in the oven until a toothpick comes out clean, about 30-35 minutes. Let it cool in the pan on a rack for about 10 minutes. Enjoy warm or at room temperature, straight from the pan.
