Brown Sugar Cashew Bars

Whip up a decadent bar cookie that's a breeze to make for a large group!
Ingredients:
  • 1/2 cup packed brown sugar
  • 2/3 cup butter or margarine, softened
  • 1/2 cup corn syrup
  • 1 teaspoon vanilla
  • 2 cups Gold Medal™ all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/3 cup corn syrup
  • 1/4 cup butter or margarine
  • 1/4 cup whipping (heavy) cream
  • 1 can (9.5 ounces) cashew halves and pieces
Instructions:
  • Preheat oven to 350°F. Grease a 15 1/2x10 1/2x1 inch jelly roll pan with shortening or line with aluminum foil. In a large bowl, combine brown sugar, butter, corn syrup, vanilla, and egg using a spoon. Mix in flour and salt. Spread mixture in the pan and bake for 18 to 20 minutes until lightly golden brown.
  • In a small saucepan, gently warm up 1/3 cup brown sugar and 1/3 cup corn syrup while stirring until the sugar dissolves. Add 1/4 cup butter and whipping cream, bring to a gentle boil, then remove from heat. Stir in 1 teaspoon vanilla.
  • 1. Scatter cashews on top of the crust, then pour the cooked mixture over the cashews, ensuring it is spread uniformly. 2. Bake for 15 to 20 minutes until golden brown and fully set. 3. Allow the dish to cool completely for about 1 hour. 4. To create bars, simply slice into 10 rows horizontally and 6 rows vertically.
