Cashew nut dessert drizzled with luscious caramel sauce.
Ingredients:
  • 60g butter, chopped
  • 125ml milk
  • 300.00g brown sugar
  • 150g self-raising flour
  • 54.00 gm maple syrup
  • 145g cashew
  • Vanilla ice-cream or thick cream, to serve
  • 40g butter, chopped
  • 125ml cream
  • 310ml water
Instructions:
  • 1. Preheat the oven to 180°C. Prepare a 6-cup (1.5L) ovenproof dish by greasing it. 2. In a medium saucepan over medium heat, combine the butter and milk. Stir with a wooden spoon for 2 minutes until the butter melts. 3. Remove the saucepan from the heat. Add the sugar, flour, and maple syrup, then stir until well combined.
  • Gently transfer the prepared mixture into the dish and generously top it with crunchy cashews for extra texture and flavor.
  • For the sauce, mix sugar, butter, and water in a medium heatproof bowl. Stir until butter melts, then add the cream. Drizzle slowly over the back of a spoon into the pudding mixture.
  • Bake in a hot oven for 40 minutes or until the center is fully cooked. Enjoy immediately with a scoop of ice cream or cream.
