Delicious gluten-free rice pudding with cardamom and a mix of pistachios and cashews.
Ingredients:
  • 100.00 gm long grain rice
  • 1287.50 gm full cream milk
  • 6 cardamom pods
  • 2 tsp ground cardamom
  • 112.50 gm sugar
  • 82.50 ml dried raisins
  • 82.50 ml pistachios, roughly chopped
  • 82.50 ml cashew nuts, roughly chopped
Instructions:
  • Combine rice, milk, water, cardamom pods, and ground cardamom in a large saucepan. Bring to a boil, then simmer for 20-30 minutes until milk reduces. Stir occasionally in the first half of cooking, then continuously in the second half to prevent sticking. Once rice is cooked and milk is thickened, remove whole cardamom pods.
  • Mix in the sugar and raisins. Let the raisins plump up for 5 minutes. Serve by dividing rice between bowls and topping with chopped pistachios and cashews.
