Indulge in Betty's soft and chewy brown sugar cookies. Swap white sugar for brown sugar for a moist and fluffy texture. Easy to make and yields 56 cookies. Freeze half the dough for later enjoyment.
Ingredients:
  • 3 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 3/4 cup coarse white sparkling sugar
Instructions:
  • Preheat your oven to 350°F. Then, in a medium bowl, combine flour, baking soda, and salt; set aside.
  • In a large bowl, use an electric mixer to beat butter and brown sugar until fluffy, about 1 minute. Scrape the sides of the bowl. Add eggs one at a time, beating just until smooth. Mix in vanilla. Gradually blend in the flour mixture on low speed until well combined.
  • Roll the dough into 56 (1 1/2-inch) balls, coat them in sparkling sugar, and then arrange them 2 inches apart on an ungreased cookie sheet.
  • Bake until the edges turn a light golden brown, which should take around 10 to 13 minutes. Let them cool on the cookie sheet for 2 minutes, then transfer to a cooling rack. Once they have cooled completely for about 15 minutes, store them in an airtight container at room temperature.
